We stumbled across this hidden gem one day as we were heading towards the Vatican. Panificio Mosca is more a bakery than it is a pastry shop, but we couldn't resist mentioning it because of the amazing breads, pizzas and pastries they produce twice a day, as they have been doing for the last 94 years.
After 94 years, the bakery itself has undergone numerous transformations as modern technology has replaced some of the older equipment. However, the characteristic flavours and ingredients have remained the same, allowing Panificio Mosca to remain the first choice for many in superior quality bread. Catering to every whim and fancy, their famous unleavened bread is baked every morning around 10 am to satisfy the needs of those who are intolerant to yeast. Another specialty is 'focaccine mosca', the taste of which belies its simple ingredients resulting in one of the softest breads in Italy. This bread is ideal with 'nutella', cheeses and cold meats.
There is however one product which ensures we return time and time again, remaining a favourite in the AdoreRome.com office. The delightful 'pizzette' of Panificio Mosca are the best we have ever tasted in the city of Rome. This is because even when cold, the bread remains soft and sweet. To eat these round mini pizzas as they come straight out the monster ovens is to truly understand what Italian cuisine is all about. The astute attention paid to the fermentation process, the careful measurements of ingredients and the freshest mozzarella and tomatoes results in a mouthwatering combination difficult to pass up. There are other types of toppings like mushrooms and such like but this one has remained our favourite.
The prices of all items are determined by weight and making your own sandwiches with the fresh bread or buying a few slices of pizza is a cheap and tasty option for those on a budget. The bakery can get extremely crowded at times and you may have to pick a number and wait until your number is called. Other times you wait patiently at the counter, until one of the girls asks you what you would like. They will weigh what you have chosen, give you a receipt and you take this to the cash register and pay. There is no real seating to speak of just five small bar stools so it is a good option for those looking for a quick and cheap bite.
