L'Amatriciana

L'Amatriciana beloved in all of Italy, earns its name from the town in the region of Lazio - Amatrice. At that time the recipe, consisted only of spaghetti, bacon and pecorino cheese until it was adopted by Romans who 'spiced it up' by using red peppers, bucatini and tomatoes. The simplicity of the dish is sure to be a favourite with busy moms and dads, while the delicious flavors of the ingredients will be a delight for children.

Ingredients for 4 people
100 gr bacon
75 gr pecorino cheese
400 gr spaghetti/bucatini
1 red pepper
1 tablespoon extra virgin olive oil
350 gr peeled tomatoes
1 glass white wine
black pepper to taste

Cut the bacon into cubes or strips and put into heated frying pan with the olive oil and chopped red pepper.
When the fat of the bacon becomes transparent, add the white wine and allow the entire mixture to evaporate.
When the wine has completely evaporated, drain the bacon from the remaining oil and set it inside in a warm place.
Chop the tomatoes into pieces, removing the seeds and place tomatoes into the frying pan still containing the mixture from the bacon. Cook the tomatoes until they form a thick sauce.
In the meantime cook pasta in salted water, for the recommended time on package. When pasta is ready drain it and add it to frying pan with tomato sauce.
Add the bacon and mix the entire mixture making sure the pasta is well covered by the sauce.
To garnish add a bit of black pepper and pecorino cheese.
